Maury is a vin doux naturel from the rugged Agly Valley in Roussillon: fermentation is halted partway by adding neutral grape spirit, which locks in the grape's natural sweetness and lifts the alcohol. The Hors d'Age designation means the wine then spent an extended stretch aging in barrel, slowly picking up the nutty, dried fruit, gently oxidative character the French call rancio.
